This recipe came to me via email. Tried it and loved it.
This is my favorite dip of all. This recipe will not only help keep you healthy, it has the benefits of fewer calories and tastes yummy
Swap some of the Avocado for peas. This according to “Prevention” cuts calories and boosts fibre. 55 calories per serving.
No-Guilt Guacamole Recipe
# 1 California avocado
# 1/4 c frozen peas, thawed
# 1 Tbsp lime juice
# 1 med tomato, quartered
# 1/4 c chopped onion
# 1 tsp minced garlic
# 1-2 Tbsp fresh cilantro leaves
# 1 sm jalapeno chile pepper, seeded
# 1/2 tsp ground cumin
1. Cut the avocado in half lengthwise around the seed. Scoop the flesh into a bowl.
2. Add the peas, lime juice, tomato, onion, garlic, cilantro, chile pepper, and cumin. Add salt and pepper to taste.
3. Place the mixture in a food processor or blender, and pulse to the desired consistency.
Makes about 1½ Cups
Per 2-Tbsp Serving: 55 cal, 1 g pro, 6 g carb, 3 g fat, 0 g sat. fat, 0 mg chol, 1 g fiber, 271 mg sodium
The Payoff: A good source of vitamins C and E and lutein.

I so love pesto and always used to make my own but, you know, got busy and it was easier to buy it. This recipe is a reminder how great homemade pesto is in comparison to the bought stuff. [A whole lot cheaper too]. I am going to start to make my own pesto again. Basil is so easy to grow and if you have plenty of it don’t waste it because it is so simple to make. Make some pesto because you will love it.
